Spinach à la Noyes

Since we’ve been talking about Lucy’s vegetable-eating habits, I feel compelled to share our favorite spinach side-dish recipe. Cheap, easy, and yummy! Inspired by a dish from the Noyes Street Café in Evanston.

Spinach à la Noyes
serves 2

1 10-oz box frozen chopped spinach (not thawed)
2-4 garlic cloves
olive oil
feta cheese
cherry tomatoes
salt & pepper

Place frozen spinach in covered glass bowl. Microwave on high for 3 minutes, until somewhat warm. In the meantime, heat some olive oil in a medium skillet over medium-high heat. Press or finely chop garlic and toss into oil. Sauté for about 30 seconds (don’t let the garlic burn!). Add spinach and sauté until heated through, just a couple of minutes. Add salt and freshly ground pepper to taste. Divide between two bowls or plates. Sprinkle with crumbled feta cheese and a few halved cherry tomatoes.

We’ve also experimented with grated parmesan cheese and sliced big tomatoes — it’s still a winner!

    I’m so happy you posted this – I was actually going to email you and ask for the recipe after you mentioned it in the post on Lucy’s eating.
