So Lucy and I baked it \u2014 then we all pitched in and ate the whole thing in 24 hours!<\/p>\n<p>I&#8217;ve noted <a href=\"https:\/\/boydsnest.org\/\/news\/2006\/plateau\/\"> before<\/a> the irresistible goodness of this delightful coffeecake. It is just about the only thing that is worth turning the oven on for in the heat of the summer &#8212; since that is when you get good blueberries! Grammie Boyd says it&#8217;s been a favorite for over 35 years, originally found in her very well-worn Betty Crocker cookbook. The Blueberry Buckle is <em>all gone?!&#8221;<\/em><\/p>\n<p>Blueberry Buckle<\/p>\n<p>cake:<br \/>\n2 c flour<br \/>\n2 t baking powder<br \/>\n\u00bd t salt<br \/>\n\u00be c sugar<br \/>\n\u00bc c butter<br \/>\n1 egg<br \/>\n\u00bd c milk<br \/>\n2 c blueberries, well-drained<\/p>\n<p>streusel topping:<br \/>\n1 c sugar<br \/>\n2\/3 c flour<br \/>\n1 t cinnamon<br \/>\n\u00bd c cold butter<\/p>\n<p>(Or, for Jon&#8217;s preferred triple streusel, increase each item by one half \u2014 1\u00bd c sugar, 1 c flour, 1\u00bd t cinnamon, \u00be c butter.)<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" src=\"https:\/\/boydsnest.org\/news\/wp-content\/uploads\/2020\/08\/IMG_3130-scaled.jpg\" alt=\"\" title=\"img_4651\" width=\"300\" height=\"225\" class=\"alignright size-full wp-image-2242\"><\/p>\n<p>Preheat oven to 375\u00b0. Grease a 9&#215;9 baking pan.<\/p>\n<p>Combine flour, baking powder, and salt; set aside. Mix together sugar, butter, and egg. Stir in milk, and then flour mixture. Carefully blend in the blueberries. Pour batter into prepared baking pan.<\/p>\n<p>Mix the streusel dry ingredients together; cut in the cold butter. Distribute evenly on top of the cake. Bake for 45-50 minutes.<\/p>\n<p><em>Muffin option:<\/em> Line a standard 12-cup muffin tin with liners (foil ones work best). Distribute batter evenly between the cups, and top with streusel. Bake at 375\u00b0 for 35 minutes.<\/p>\n<p>The streusel topping is technically a doubled recipe, as Jon always asks me to make extra streusel on top. This works nicely for a cake, but not so much for the muffins &#8212; the streusel starts to fall off. But he doesn&#8217;t care! &#8220;More streusel!&#8221; he cries.
